Leandra Medine Sunday Dinner: Pasta a la norma


Leandra Medine, the OG New York Cool Girl, founder of Man Repeller, enthusiast of pushing the boundaries of traditional fashion, and YALI Tribe member is sharing today one of her favorite Sunday night recipes, what she calls: pasta a la norma.

Pasta a la norma
    Ingredients 
    • homemade cassava flour pasta (or whatever pasta you prefer)
    • tomato sauce from fire-roasted canned tomatoes 
    • 3 cloves garlic
    • onion powder
    • garlic powder
    • salt and pepper
    • fresh basil 
    • eggplant (cubed)
    Directions
    • make homemade pasta (optional)
    • bring water to a boil on the stovetop
    • add pasta to boiling water and cook 
    • strain pasta 
    • cube the eggplant
    • in one pan add olive oil, salt, pepper, and cubed eggplant to cook on medium heat
    • in a separate pan add canned tomatoes, garlic, basic, and all the spices (to taste)
    • once the eggplant is cooked, add to the saucepan
    • combine strained pasta and sauce 
    • voila, dinner for four!
